Crazy over Chowder

I love Chowder.  The only type of chowder I was familiar with was clam chowder during my university days.  I remembered eating Howard Johnson clam chowder from yester-decades.  Manhattan clam chowder, a tomato based broth, that I don't care much about.  Once a while I still order a cup of chowder and definitely no 2 bowls of chowder are alike. 

My love for chowder is once again rekindle while I am here in Canada.  Now it's more than clam chowder, they now have seafood chowder and my bowl of cod chowder I had in St John's is still unforgettable.  Rich and creamy and the cod fish was so fresh and sweet.


When I was in Sydney, I read about how great this restaurant is, #7 in Sydney and supposedly a great review on it chowder.  And it was located just opposite my hotel, how great can it get right? I was very disappointed when I got my chowder and even more disappointed when I tasted the chowder.  The potato was chunky and the fish was in bits and pieces and was dry and hard.  The broth was too sour and overall, it was not good. 


So when I got back I made my own chowder and it really not that hard to do, using the broth from the lobster and crab, I cook up the onions and the diced potatoes.  Took half of it and added the small pieces of crab and the green liver and the red roe and put inside the blender and blended it up.  Did a bit of roux and put in the blended lobster soup.  Wala...here is the yummy lobster bisque.

Next I did a bit of roux and added the rest of the onion and potato broth to it and then added the cream and pieces of lobster into the soup.  Another soup ready.
